Potatoes - All you need to know!

There are literally thousands of different varieties of potatoes grown around the world. In the UK around 80 varieties are grown commercially. Below are some of the most popular potato varieties available in this country.

Potatoes are seasonal and are usually harvested, depending on the variety and where in the country they are grown, from May to October.  Potatoes are often categorised according to their season. For example: Varieties such as Rocket or Maris Bard are described as ‘earlies’ or ‘new potatoes’ as they are planted in the winter, ready for harvesting in the spring or early summer. Their skins are not firm and ‘set’ and are sometimes referred to as ‘fluffy’.

Varieties such as King Edward or Maris Piper are harvested in late summer or early autumn when their skins are firm and set and are known as ‘maincrop’. The majority of potatoes sold in the UK are maincrop potatoes; they are usually available from September to May.

Varieties such as Charlotte are described as ‘salad’ potatoes. Their skins are firm and ‘set’ and they have a moist texture.

The texture of potatoes varies considerably. A potato may be described as having a waxy or floury texture and there is a scale of 1 – 10 on which varieties are placed. Where potatoes sit on the scale will depend on the amount of dry matter in the potato. For example a floury potato will have a much higher dry matter than a waxy potato.

Marfona
Marfona has an almost ‘buttery’ flavour and a smooth waxy texture making it a very popular variety for baking. Marfona is great baked in both the microwave or the oven and is often sold in packs of 4 as a ‘baking potato’. It is 3 on the waxy / floury scale. Marfona has a white to yellow skin and light yellow flesh and is grown predominantly in England, harvested from August and available most of the year. It is available from many retail outlets.

King Edward
King Edward is very much a floury variety - scoring 6 on the waxy / floury scale, which is one of the highest scores. This makes King Edward a great variety for smooth creamy mash and light fluffy roast potatoes and even chips. King Edward is a traditional maincrop variety and has a white skin with very distinctive pink colouration which makes it an easy potato to identify. It has a creamy coloured flesh and a good flavour and is widely available. 

Desiree
Desiree scores 5 on the waxy/floury scale and can be used for great roast potatoes and chips, creamy mash and also wedges. Desiree is also sold as a baking potato. This striking red-skinned maincrop potato, with a light yellow flesh is very widely available.

Maris Piper
Like Desiree, Maris Piper scores 5 on the waxy / floury scale. With its pleasant floury texture it is therefore ideal for many potato dishes from chips and roast potatoes, mash and wedges. Maris Piper is one of the best known and popular potato varieties on sale, with more Maris Piper grown across the UK than any other variety. It is also a great favourite with fish and chip shops because it is so reliable. It has a creamy coloured flesh and although technically its skin is white to yellow in colour, it is regarded as a ‘white’ potato and is widely available.

Estima
Estima scores 4 on the waxy/floury scale. It is regarded as being versatile and is especially suited for dishes where a firm cooked potato texture is required, as in salads or some soups. Estima is also sold as a baking potato and has a mild taste that complements other flavours. Estima is the second most popular potato in terms of planting in the UK. It has a white to yellow skin and light yellow flesh and is widely available.

Charlotte

Charlotte is a salad potato. With its distinctive long, oval shape, white skin and moist texture it is ideal for so much more than just salads. Scoring 4 on the waxy / floury scale Charlotte stays firm when cooked and can also be very successfully sautéed and even roasted in its skin for a firm ‘roast’ potato. It is frequently sold washed and in bags or punnets which adds to the convenience value of this widely available potato.
