Rustic Open Blackberry & Pear Tart
 Makes 4
Ingredients: Pastry 100g/4oz Spelt Flour 100g/4oz Plain Flour 125g/5oz Unsalted Butter, cut into small pieces 25g/ 1oz Caster sugar
4 Pears, chopped & stewed & cooled 100g/4oz Blackberries 1 tbsp Sugar 1 tbsp corn flour 1 Egg, beaten 1 tbsp Granulated sugar, to decorate
Recipe: To make the pastry, put the flour into a bowl & rub in the butter until it resembles fine bread crumbs. Stir in the sugar; bring the pastry together by adding a little water (5-6 tbsp). Roll out the pastry & cut 4x18cm/7” circles. Brush the pastry circles with egg.
Mix the poached pears with the blackberries, sugar & corn flour. Divide the mixture between the pastry circles. Turn in the edges of the pastry, it is meant to look a bit rustic. Glaze with egg wash & sprinkle with sugar. Put pies onto a baking tray.
Bake in a preheated oven at 200C/400F/Gas Mark 6 for 25-30 minutes.
These are great to wrap up & take on a picnic
