Vegetable Tagine
Serves 4 Prep time: 10 minutes Cook time: 20 minutes
Ingredients
600g potatoes, diced (eg Maris Piper) 1 tbsp vegetable oil 1 onion, diced into large pieces (250g) 2 carrots, thickly sliced (200g) 1 red pepper, thickly sliced (180g) 2 tsp Tagine Paste 400g tin chopped tomatoes 410g tin chick peas, drained and rinsed To serve: fresh parsley and 4 tbsp natural yogurt
Method
Boil the potatoes for 5 minutes, then drain.Heat the oil in a large frying pan and fry the onion, carrot and potato for 5 minutes. Add the remaining ingredients, cover and simmer for 10 minutes.Serve with a sprinkling of chopped parsley and a dollop of yogurt.Potato Tip: Use an all-rounder like Maris Piper for best results.
